The experience is wonderfully informal: diners move between the barrels as the cider maker opens each one, calling “txotx!” before everyone gathers around the stream of cider. Traditional menus typically include cod omelette, grilled cod, steak, cheese and quince, creating an evening that feels as much like a cultural gathering as a meal.
