Modica chocolate, also known as chocolate di Modica, is a unique, artisan chocolate made in the town of Modica, Sicily. It is crafted using an ancient Aztec method brought to Sicily by the Spanish in the 16th century. Unlike most chocolates, Modica chocolate is not conched (smoothened), so it retains a grainy texture. The chocolate is made by mixing cocoa mass with sugar at low temperatures, preserving the distinct, raw flavour of the cocoa beans. It is often flavoured with spices such as cinnamon, vanilla, or chili, and can include ingredients like orange zest or pistachios. Modica chocolate is renowned for its intense taste and is a protected product with PDO (Protected Designation of Origin) status.
